Acorn Squash & Sweet Potato Soup

Scotch Eggs Sin Carne
I’ve been wanting to try Scotch Eggs for some time and thought it would be great fun to try to make them vegetarian. Relying on my dear Dr. Praeger’s California Veggie Burgers, I thawed a few out, molded them around boiled eggs and rolled them in panko. Not sure which cooking method would work best, I fried one and baked the other for about 20 minutes at 375 degrees F.
